An Authentic Taste of San Francisco
Achille Paladini was an immigrant from Ancona Italy who came to America searching for "the land of opportunity." He landed in San Francisco in the year 1866. With little education but a lot of drive, he set out for the American Dream. One day while fishing for his supper, he caught two fish on one hook. A tired gold miner offered to purchase the other fish and, as they say, "the rest is history!"
Paladini Seafood Company grew into California's largest seafood distributor in just a few short years. With receiving stations as far north as Eureka and as far south as Los Angeles, they sold to markets, restaurants, schools and hospitals up and down the California coast. The company headquarters always stayed in Achille's favorite and most dearly held city, San Francisco. The seemingly ever-present Paladini Seafood delivery trucks quickly became an every day sighting for San Francisco residents.
Achille's last office was on Clay street where the TransAmerica pyramid now stands. Achille's son and later his grandson carried on the family seafood business.
Today Achille Paladini's grandson, also named Achille Paladini, offers the same seafood condiments that have been in the family for over 125 years. Achille, nicknamed "Kiki," is proud to finally be able to share these great family traditional recipes with other seafood lovers. |

Paladini's Louis Dressing is a versatile sauce, salad dressing, dip, sandwich spread, and seafood dressing. Try it on seafood salad, pasta, or a Crab/Shrimp sandwich on Sourdough -- a Real San Francisco treat!

Here's a Paladini recipe to get you started:
Belgian Endive Stuffed with Crab Louis
This recipe is a combination of old San Francisco and new California Cuisine. The crab meat mixed with Paladini's Louis dressing is gently laid within a Belgian Endive leaf for a great mix of smooth, creamy seafood and crisp endive. It can be served as a passed appetizer or arranged on a plate as a first course. Either way, be prepared for the raving to begin!
1-2 Belgian Endive depending on their size
1/2 Pound crab meat
1 jar Paladini Louis Dressing
A squeeze of lemon juice
Carefully peel back and separate the endive leaves. Rinse and pat dry. Mix the crab meat, lemon juice and 3-4 tablespoons of Paladini Louis Dressing depending on your taste. Gently spoon crab mixture into leaves. Do not over load them so they can be easily picked up for eating. It's that easy!
