Count Arnaud (as he came to be called, without any bona fide claim to the title) practiced a brilliant new approach to the serving of food and drink. He became so influential in his business that it can be said that the entire New Orleans restaurant community reflects, to one degree or another, his ideas. And the style he set inspires everything Arnaud’s does to this day.

The Mediterranean region is the birth place of the olive and is still the largest producer of olives. Out of the 800 million olive trees growing on earth 93% of them are in the Mediterranean. Mike’s own olive orchard stands in Puglia, Italy. Here, the olive trees are bountiful, stealthily growing amongst the rolling hills and fertile plains.
It is from these trees that Mike’s Extra Virgin Olive Oil is produced. Olive oil is judged by its taste and acidity level. The lower the acidity level, the higher the quality. Extra Virgin Olive Oil, like Mike’s, must have an acidity level of not more than 1% and a perfect aroma, flavor, and color.
